Ingredients
- 1/2 cup old fashioned oats
- 1/2 cup brown sugar
- 2/3 cup flour
- 1/3 cup salted butter (melted)
- 1/2 tsp cinnamon
- 2 1/2 cups peaches (peeled and sliced)
- 1 cup sliced strawberries
- 1/4 cup brown sugar (for fruit)
- 3 tsp cornstarch
- 1/3 cup water
- 1/8 tsp salt
- 1/2 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine oats, brown sugar, flour, cinnamon, and melted butter until crumbly. Press half into a greased 9×9 baking pan.
- Layer sliced peaches and strawberries evenly over the crust.
- In a small saucepan over medium heat, mix brown sugar, cornstarch, salt, and water until thickened. Stir in vanilla extract.
- Pour syrup over the fruit layer and sprinkle remaining crust mixture on top.
- Bake for about 35 minutes until golden brown. Optionally, broil for an additional 2–3 minutes for extra crunch.
