- 16 ounces sugar cookie dough

- 2 cups powdered sugar

- 1 pound fresh strawberries
- 1 cup water
- ½ cup sugar
- 3 ounces plant-based gelling agent mix (such as agar-agar)
- ¼ cup cornstarch
Instructions
- Preheat the oven according to the sugar cookie dough package instructions. Line a baking sheet with parchment paper.
- Roll out the softened cookie dough into a circle about ½-inch thick on the prepared sheet and bake until golden brown. Allow it to cool completely.
- In a mixing bowl, beat together softened cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until fluffy.
- Slice half of the fresh strawberries for garnish. In a saucepan, combine water and sugar; bring to a boil before whisking in the plant-based gelling agent until dissolved, then add cornstarch to thicken slightly.
- Spread frosting over the cooled crust, arrange sliced strawberries on top, and drizzle with the gelling mixture for shine.
- Refrigerate for at least one hour before slicing and serving.
