  • 1/4 cup granulated sugar (for streusel)
  • 1/4 cup brown sugar, packed (for streusel)
  • 1/4 teaspoon ground cinnamon (for streusel)
  • 1/4 cup unsalted butter, cold and cubed (for streusel)
  • Pinch of salt (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or grease it lightly.
  2. In a small bowl, mix together the ingredients for the streusel topping: flour, sugars, cinnamon, and salt. Add cold butter and mix until crumbly.
  3. In a large bowl, whisk together the dry muffin ingredients: flour, sugars, baking powder, baking soda, salt, and cinnamon.
  4. In another bowl, combine the wet ingredients: melted butter, buttermilk, egg, and vanilla extract.
  5. Pour wet ingredients into dry ingredients and stir gently until just combined. Fold in chopped strawberries.
  6. Fill muffin cups about two-thirds full with batter and sprinkle streusel on top.
  7. Bake for 18-22 minutes until a toothpick comes out clean.
  8. Allow to cool in the pan for five minutes before transferring to a wire rack.
