  • ½ vanilla bean
  • 6 tablespoons sugar
  • 1 ⅓ cups milk
  • 4 egg yolks
  • 2 tablespoons cornstarch
  • 1 teaspoon butter
  • 9-inch baked tart crust
  • 1 pint fresh strawberries
  • 2 tablespoons strawberry or apricot jam

Instructions

  1. In a bowl, combine vanilla seeds with 3 tablespoons sugar. Heat milk and the vanilla pod in a saucepan over medium heat until dissolved.
  2. Whisk egg yolks with the remaining sugar until light and ribbon-like.
  3. Mix cornstarch into the remaining milk until smooth; combine this with the heated milk mixture while whisking.
  4. Pour back into the saucepan and cook on low heat until thickened.
  5. Stir in butter and cool pastry cream before refrigerating for at least 2 hours.
  6. Spread cooled pastry cream evenly into the pre-baked tart crust.
  7. Slice strawberries thinly and layer them on top of the cream.
  8. Glaze strawberries with warmed jam mixed with a little water for shine.
  9. Chill before serving.
