Ingredients
- ½ vanilla bean
- 6 tablespoons sugar
- 1 ⅓ cups milk
- 4 egg yolks
- 2 tablespoons cornstarch
- 1 teaspoon butter
- 9-inch baked tart crust
- 1 pint fresh strawberries
- 2 tablespoons strawberry or apricot jam
Instructions
- In a bowl, combine vanilla seeds with 3 tablespoons sugar. Heat milk and the vanilla pod in a saucepan over medium heat until dissolved.
- Whisk egg yolks with the remaining sugar until light and ribbon-like.
- Mix cornstarch into the remaining milk until smooth; combine this with the heated milk mixture while whisking.
- Pour back into the saucepan and cook on low heat until thickened.
- Stir in butter and cool pastry cream before refrigerating for at least 2 hours.
- Spread cooled pastry cream evenly into the pre-baked tart crust.
- Slice strawberries thinly and layer them on top of the cream.
- Glaze strawberries with warmed jam mixed with a little water for shine.
- Chill before serving.
