Ingredients
- 1 box strawberry cake mix
- 4 eggs
- 1 1/3 cup water
- 2/3 cup vegetable oil
- 3 oz box of strawberry Jello
- 1 stick unsalted butter (softened)
- 7.5 oz vegan marshmallow fluff
- 3 cups powdered sugar
- 1 tsp vanilla extract
- 4 tbsp heavy whipping cream
Instructions
- Preheat oven to 350°F. Grease bundt pan with non-stick spray.
- In a large bowl, combine strawberry cake mix, eggs, water, vegetable oil, and strawberry Jello; mix until smooth.
- Pour batter into prepared bundt pan and bake for 35-40 minutes or until a toothpick comes out clean.
- Let cake cool in the pan for about 10 minutes before transferring to a cooling rack to cool completely.
- In another bowl, beat softened butter, vegan marshmallow fluff, powdered sugar, and vanilla until smooth; gradually add heavy cream until creamy.
- Once the cake is cooled, scoop holes in the base and fill them with the cream filling using a piping bag.
- Flip cake back onto serving plate and dust with powdered sugar before slicing.
