  • 2/3 cup vegetable oil
  • 3 oz box of strawberry Jello
  • 1 stick unsalted butter (softened)
  • 7.5 oz vegan marshmallow fluff
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 4 tbsp heavy whipping cream

Instructions

  1. Preheat oven to 350°F. Grease bundt pan with non-stick spray.
  2. In a large bowl, combine strawberry cake mix, eggs, water, vegetable oil, and strawberry Jello; mix until smooth.
  3. Pour batter into prepared bundt pan and bake for 35-40 minutes or until a toothpick comes out clean.
  4. Let cake cool in the pan for about 10 minutes before transferring to a cooling rack to cool completely.
  5. In another bowl, beat softened butter, vegan marshmallow fluff, powdered sugar, and vanilla until smooth; gradually add heavy cream until creamy.
  6. Once the cake is cooled, scoop holes in the base and fill them with the cream filling using a piping bag.
  7. Flip cake back onto serving plate and dust with powdered sugar before slicing.
