- 1 cup raspberry preserves
- 2 tablespoons extra virgin olive oil
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 1 pound boneless skinless chicken thighs
- 2 cloves garlic, minced
- 1 medium jalapeno, thinly sliced
- Fresh raspberries for garnish
Instructions
- Gather and prepare all ingredients: mince garlic, slice jalapenos, and set aside fresh raspberries.
- In a mixing bowl, combine raspberry preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes. Stir until well mixed.
- Season chicken thighs with salt, black pepper, and chili powder in another bowl.
- Heat olive oil in a skillet over medium-high heat. Add seasoned chicken and cook for about 5-6 minutes on each side until golden brown.
- Pour the prepared glaze over cooked chicken; reduce heat to low and simmer for about 5 minutes until slightly thickened.
- Garnish with sliced jalapenos and fresh raspberries before serving.
