Ingredients
- 2 medium-sized sweet potatoes
- 2 cans of black beans
- 1 can of diced tomatoes
- 1 large onion
- 1 red bell pepper
- 1 green bell pepper
- 3 cloves of garlic
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 1/2 to 1 cup vegetable broth (optional)
Instructions
- Peel and dice sweet potatoes. Chop onion and bell peppers; mince garlic.
- Drain and rinse black beans thoroughly.
- (Optional) Sauté onion in olive oil until translucent; add garlic and peppers for another 3 minutes, then stir in spices.
- Combine all ingredients in the crockpot.
- Set the crockpot to Low for 6–8 hours or High for 3–4 hours.
- Adjust consistency with vegetable broth if desired before serving.
