Instructions
- Cook the sweet potato until tender; then mash until smooth.
- In a mixing bowl, beat together softened butter, brown sugar, and granulated sugar until fluffy. Add egg, vanilla extract, and mashed sweet potato; mix well.
- In another bowl, whisk together flour, spices, baking soda, and salt.
- Gradually incorporate dry ingredients into the wet mixture until just combined.
- Drop spoonfuls of dough onto parchment-lined baking sheets.
- Bake in a preheated oven at 350°F for about 10–12 minutes or until edges are golden brown.
- Let cool slightly before transferring to a wire rack.
