Ingredients
- 2 cups sushi rice
- 2 chicken breasts (diced)
- ¼ cup soy sauce
- 2 tbsp honey
- 1 avocado (sliced)
- ¼ cup rice vinegar
- Sesame seeds for garnish
- Fresh cilantro for garnish
Instructions
- Rinse sushi rice under cold water until clear. Cook with 2 ½ cups of water in a rice cooker or pot. Once cooked, mix in rice vinegar, sugar, and salt.
- Marinate diced chicken in soy sauce, honey, and sesame oil for 10-15 minutes. Cook over medium heat until caramelized and fully cooked.
- Assemble the stack using a ring mold: layer sushi rice, slices of avocado, and teriyaki chicken.
- Garnish with sesame seeds, fresh cilantro, and optional sriracha.
