Instructions
- Preheat your oven to 350°F and prepare a 9×5-inch loaf pan by spraying it with cooking spray and lining it with parchment paper.
- Melt the butter in a large glass bowl; if using coconut oil, melt it in the microwave or stovetop.
- Combine the melted butter with honey and mashed bananas, whisking until smooth. Add eggs and mix well.
- Stir in baking soda, salt, cinnamon, and vanilla extract until combined.
- Gently fold in the flour using a rubber spatula until just mixed—avoid over-mixing.
- Pour the batter into the prepared loaf pan and bake for 55-65 minutes or until a toothpick inserted comes out clean.
- Allow cooling for about 10 minutes before transferring to a wire rack to cool completely.
