Ingredients
- 1/2 cup Extra Virgin Olive Oil
- 1/4 cup Fresh Lemon Juice (preferably freshly squeezed)
- 1 tablespoon Dijon Mustard
- 1 teaspoon Honey or Maple Syrup
- 1 clove Garlic, minced
- Salt and Pepper to taste
- 1 teaspoon Lemon Zest (optional)
- 1/4 cup Fresh Herbs (chopped, optional)
Instructions
- In a medium bowl, whisk together the lemon juice, Dijon mustard, honey (or maple syrup), and minced garlic until well combined.
- While continuously whisking, slowly drizzle in the extra virgin olive oil to create a smooth emulsion.
- Season with salt and pepper to taste. Add lemon zest and fresh herbs if desired.
- Transfer the vinaigrette to a jar with a tight-fitting lid and refrigerate for at least 30 minutes to allow flavors to meld.
- Shake well before serving over salads or as a marinade.
