Ingredients
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tbsp melted butter
- 2 (8 oz) pkgs softened cream cheese
- ½ cup granulated sugar (for filling)
- ¼ cup sour cream
- ½ tsp vanilla extract
- 2 room temperature eggs
- 1 ½ cups chopped fresh strawberries
- 5 tbsp sugar (for topping)
- 3 tbsp water
- 1 tbsp lemon juice
- 2 tsp cornstarch
Instructions
- Preheat oven to 350°F and line an 8×8 or 9×9 baking pan with parchment paper.
- Mix graham cracker crumbs, sugar, and melted butter; press into the bottom of the pan.
- Beat cream cheese, sugar, sour cream, and vanilla until smooth. Add eggs one at a time, mixing on low until just combined.
- Pour filling over the crust and bake for 25-35 minutes until edges are set but center is slightly jiggly.
- Cool at room temperature for about 1-2 hours before refrigerating for at least 3-4 hours before slicing.
