  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp melted butter
  • 2 (8 oz) pkgs softened cream cheese
  • ½ cup granulated sugar (for filling)
  • ¼ cup sour cream
  • ½ tsp vanilla extract
  • 2 room temperature eggs
  • 1 ½ cups chopped fresh strawberries
  • 5 tbsp sugar (for topping)
  • 3 tbsp water
  • 1 tbsp lemon juice
  • 2 tsp cornstarch

Instructions

  1. Preheat oven to 350°F and line an 8×8 or 9×9 baking pan with parchment paper.
  2. Mix graham cracker crumbs, sugar, and melted butter; press into the bottom of the pan.
  3. Beat cream cheese, sugar, sour cream, and vanilla until smooth. Add eggs one at a time, mixing on low until just combined.
  4. Pour filling over the crust and bake for 25-35 minutes until edges are set but center is slightly jiggly.
  5. Cool at room temperature for about 1-2 hours before refrigerating for at least 3-4 hours before slicing.
