- 2 cans Great Northern beans (drained and rinsed)
- 2 cups fresh baby spinach
- ½ cup heavy whipping cream
- Parsley (for garnish)
Instructions
- In a large Dutch oven over medium-high heat, cook the sausage until browned, breaking it into smaller pieces.
- Reduce heat to medium and add the onions, celery, and carrots; sauté until softened.
- Stir in garlic, tomato paste, Italian seasoning, crushed red pepper, and black pepper.
- Pour in chicken broth and add the Great Northern beans; bring to a simmer.
- Once the vegetables are tender, stir in heavy cream and fresh spinach until wilted.
- Serve warm in bowls garnished with chopped parsley.
