- 2 tablespoons lemon juice or white apple vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and pepper to taste
Instructions
- Wash the celery thoroughly and trim the ends. Slice it thinly on the bias.
- In a dry skillet over medium heat, toast your choice of nuts until fragrant; let cool.
- In a mixing bowl, whisk together olive oil, lemon juice or vinegar, Dijon mustard, honey, salt, and pepper until emulsified.
- In a large bowl, combine sliced celery and toasted nuts; add cheese if desired.
- Drizzle dressing over the salad mixture and toss gently to coat. Serve immediately or chill for enhanced flavors.
