  • 1 lb carrots, peeled
  • 3 tbsp olive oil
  • 1 tbsp za'atar spice
  • 1/4 tsp cumin
  • Salt & pepper
  • 1/2 cup feta cheese
  • 3 tbsp ricotta
  • 2 tsp olive oil (for dip)
  • 1 tbsp lemon juice
  • Fresh mint and parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the carrots diagonally into even pieces and toss them in a mixing bowl with olive oil, za'atar, cumin, salt, and pepper.
  3. Spread the seasoned carrots on a baking sheet lined with parchment paper and roast for about 30 minutes, flipping halfway through.
  4. While the carrots are roasting, blend the feta cheese, ricotta, olive oil, lemon juice, salt, and pepper in a food processor until smooth.
  5. Once roasted, arrange the feta dip on a serving platter and top with roasted carrots.
  6. Garnish with fresh mint and parsley; drizzle lightly with olive oil and date syrup or honey before serving.
