Ingredients
- 1 lb carrots, peeled
- 3 tbsp olive oil
- 1 tbsp za'atar spice
- 1/4 tsp cumin
- Salt & pepper
- 1/2 cup feta cheese
- 3 tbsp ricotta
- 2 tsp olive oil (for dip)
- 1 tbsp lemon juice
- Fresh mint and parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the carrots diagonally into even pieces and toss them in a mixing bowl with olive oil, za'atar, cumin, salt, and pepper.
- Spread the seasoned carrots on a baking sheet lined with parchment paper and roast for about 30 minutes, flipping halfway through.
- While the carrots are roasting, blend the feta cheese, ricotta, olive oil, lemon juice, salt, and pepper in a food processor until smooth.
- Once roasted, arrange the feta dip on a serving platter and top with roasted carrots.
- Garnish with fresh mint and parsley; drizzle lightly with olive oil and date syrup or honey before serving.
