Ingredients
- 6 oz fresh spinach
- 1 Tbsp mirin (alcohol-free)
- 2 Tbsp toasted white sesame seeds
- 2 tsp miso
- 1 tsp sugar
- ½ tsp soy sauce
- ¼ tsp Diamond Crystal kosher salt
Instructions
- Bring a large pot of water to boil and toast sesame seeds in a frying pan until fragrant.
- In a small saucepan, heat mirin over medium heat until alcohol evaporates; set aside.
- Grind toasted sesame seeds in a mortar until slightly textured.
- Mix ground sesame with miso, sugar, soy sauce, and the cooled mirin.
- Blanch spinach in salted boiling water for about 45 seconds total; cool immediately in iced water.
- Squeeze excess water from spinach and cut into 2-inch pieces.
- Combine spinach with the sauce in a bowl; mix well to coat.
