  • 1 Tbsp mirin (alcohol-free)
  • 2 Tbsp toasted white sesame seeds
  • 2 tsp miso
  • 1 tsp sugar
  • ½ tsp soy sauce
  • ¼ tsp Diamond Crystal kosher salt

Instructions

  1. Bring a large pot of water to boil and toast sesame seeds in a frying pan until fragrant.
  2. In a small saucepan, heat mirin over medium heat until alcohol evaporates; set aside.
  3. Grind toasted sesame seeds in a mortar until slightly textured.
  4. Mix ground sesame with miso, sugar, soy sauce, and the cooled mirin.
  5. Blanch spinach in salted boiling water for about 45 seconds total; cool immediately in iced water.
  6. Squeeze excess water from spinach and cut into 2-inch pieces.
  7. Combine spinach with the sauce in a bowl; mix well to coat.
